4-ingredient vegan lemon and rosemary ice lollies

Do summer the Miller Green way with our vegan lemon and rosemary ice lollies.

Whether it’s down to the muggy weather or our cataclysmal political climate, we can bet our fellow British residents have been feeling just as hot and bothered as we have lately. To help you weather the storm, we’ve come up with a simple, fuss-free recipe for delicious vegan ice lollies.

These summery treats are creamy yet light, laced with refreshing citrus and anti-inflammatory rosemary to cool you down and soothe those frayed nerves. The perfect antidote to humid climes and even stickier politicians.

All you need is four ingredients, an ice lolly mould and five minutes of your time…

Ingredients:

1 tin of coconut milk

the juice & zest of 1 lemon

1 tbsp agave nectar

1/2 tbsp fresh chopped rosemary

Method:

Put all of the ingredients in a mixing bowl and whisk until smooth. Pour into 4 ice lolly moulds and freeze until set.
