These summery treats are creamy yet light, laced with refreshing citrus and anti-inflammatory rosemary to cool you down and soothe those frayed nerves. The perfect antidote to humid climes and even stickier politicians.
All you need is four ingredients, an ice lolly mould and five minutes of your time…
1 tin of coconut milk
the juice & zest of 1 lemon
1 tbsp agave nectar
1/2 tbsp fresh chopped rosemary
Put all of the ingredients in a mixing bowl and whisk until smooth. Pour into 4 ice lolly moulds and freeze until set.
